What people mean by “Greek crawfish”

It is the European freshwater crayfish, and around Los Angeles it is sold under whichever name the shop prefers — Greek, European, or just “the big ones”. What matters at the table is that it is not the Louisiana red swamp crawfish that fills a Cajun boil: it runs larger, the shell is heavier, and there is enough meat in a tail to be worth the work of getting it out. If you grew up eating раки or խեցգետին, this is the animal you are looking for, and it is the one we sell.

Live at $35, boiled at $40 — and live is the cheaper one

Most seafood costs more raw than cooked. Ours does not. We charge $35 a pound live and $40 boiled, because the second number already includes our stock, our garlic butter and a driver who has to get it to you hot. Households that run their own boil — and in this city that is a great many households — pay less for exactly the same crawfish. Three pounds is the minimum when crawfish are ordered on their own; inside a set there is no minimum.

Boiled our way, or handed over live

Everything we cook goes into one garlic butter. There is no seasoning menu to work through, on purpose — the owner does not think a guest should have to design their own dinner. You choose two things: how salty, and how spicy. Order them live and none of that applies: you get a bag of live crawfish, cool and damp, and the pot is yours.

Where we bring them

The kitchen is in Sun Valley and we drive out from there across 41 cities and neighbourhoods — Glendale, Burbank, the whole Valley, the Eastside, the Westside and past the county line. Delivery is $15 for every 15 miles from our kitchen, free over $600. Stock turns over, so if you need a particular weight on a particular day, call (747) 488-9441 a day ahead rather than hoping.

Greek crawfish or Louisiana crawfish — what is the difference?

Size and purpose. Louisiana crawfish are small, come by the sack and are meant to be eaten by the pile at a Cajun boil. Greek crawfish are bigger, cost more per pound, and are usually cooked simply — boiled with salt and dill, or in our case in garlic butter. Neither is better than the other; they are two different dinners.
