Are crawfish available all year?
No, they come in waves. Greek crawfish are seasonal, and the tank runs full some weeks and empty others, so we cannot promise anything a month out. We are wrapping a shoot on the lot. How do we feed the crew?
Order one set rather than a pile of singles. The Set for Six, $329.99, arrives as one sealed tray that opens on a conference table. Put the building and the gate you use in the notes — for most crews on the lot that is the Barham Boulevard entrance — and send someone down when the driver calls, because we do not clear the Universal gates ourselves. Over twelve people, 48 hours.
One of us cannot take heat and someone at the table has a shellfish allergy.
Set the heat for whoever can take the least. Five levels start at No Heat, and salt goes light on request. On the shellfish allergy the answer is no: everything comes out of the same pot, sides included, so we cannot promise a safe tray. In a room at the Sheraton Universal, with no kitchen and no second pot, order that person something else.
