Most orders come from the flats behind the boulevard. In Colfax Meadows it is a weeknight family table: a couple of pounds of crawfish, a pound of shrimp, corn and chickpeas to make the pot stretch. Up at the foot of Laurel Canyon the orders come in later and smaller, two people and one tray. And the CBS Studio Center side orders in bulk, for a room that has been in there since call time.

Down the 101, roughly eight miles, usually about eighteen minutes behind the wheel. The driver comes off at Coldwater Canyon or at Laurel Canyon depending on which side of the grid you are on. Between five and seven the southbound queue at the Ventura interchange is the one thing that stretches the run, and at that hour the boulevard itself is worse than the freeway, so he cuts through the Colfax Meadows side streets where he can. If your address is a hillside street at the foot of Laurel Canyon, where the road narrows and there is nowhere to stop, leave a line about parking.

On a weeknight, before four or after seven. The run is eight miles of 101 and almost nothing else, so the evening peak is the one thing that stretches it. Weekends are easier on the freeway and slower on the ground: Ventura Boulevard crawls, and Sunday morning the farmers market crowd takes the side streets with it.

How do I reheat what is left, and how long does it keep?

Two days in the fridge, sealed, and reheat it wet. Crawfish go into a covered pan with a splash of water over low heat, or a few minutes in a steamer. A microwave dries the shells and splits the garlic butter. What you put away tonight was boiled tonight, eighteen minutes down the 101, not held under a lamp.

How much notice do you need for a backyard full of people in Colfax Meadows?
