Shell-on is a cooking decision
Peeled shrimp go into the pot and come out tasting of the pot. In the shell they keep their own flavour and pick up the seasoning around it. You do the peeling at the table, which is the deal a boil offers.
Tiger or Blue Diamond
Tiger is the bigger, firmer, more assertive shrimp. Blue Diamond is sweeter and softer at $25.99 less per pound. Most tables that order both find the Tiger goes to the adults.

They are boiled in the shell, so they arrive as they cooked. If you want them handled differently, call the kitchen before you order rather than after.

Is it cooked before it leaves?
It is boiled after you order, not before. That is the whole reason the kitchen exists — nothing sits in a warmer waiting for someone to buy it.
