Why the skewer is there
A lobster tail curls as it cooks and the butter runs off it. Skewered flat, the meat stays open to the pot the whole time. It is a kitchen habit, not a presentation choice.
Priced per tail, not per pound
Tails are the one item on the list sold by the piece: $22 each, five ounces. Order them on their own or as the top layer of a set — every set from two people upward already includes them.

Is it a whole lobster?
No — this is the tail, five ounces, which is the part that goes in a boil. We do not sell whole live lobster.
How much do you deliver for?

Is it cooked before it leaves?
It is boiled after you order, not before. That is the whole reason the kitchen exists — nothing sits in a warmer waiting for someone to buy it.
