Yes, we deliver crawfish to Woodland Hills, and it is the far end of our regular zone rather than an exception to it. Both ZIPs are in: 91367 around Warner Center and Topanga Village, 91364 down the south side toward the canyon. Checkout takes either one, whether the address is a tower at Warner Center or a deep lot in Walnut Acres.

Two different orders come out of these two ZIPs. Warner Center sends office-floor orders, one big tray split by six or eight people who did not want to drive to Topanga for lunch. West of Topanga Canyon Boulevard, in Walnut Acres and the streets under Mulholland, it is a backyard and a long table, and the way to feed that many people without emptying a wallet is Blue Diamond shrimp at $15.99 a pound stacked in next to the crawfish.

Eighteen miles west on the 101, usually about twenty-eight minutes from our kitchen in Sun Valley. That is a long regular run, and the one the freeway can stretch furthest: westbound past Reseda Boulevard the lanes thicken at dinner time, and the Topanga Canyon interchange is where they stop moving altogether. Warner Center is the fast half of the city — off at Topanga or De Soto and the tower is right there. Walnut Acres means leaving the boulevard for the residential grid, where the blocks run wide and quiet and read slowly after dark. Order a little earlier than you would in Sherman Oaks and it lands the same way.

Every tray is sealed at the pot and rides out in an insulated carrier, so the drive costs the boil as little heat as it can.

In August this is routinely the hottest reading in the county, and nobody wants a boiling pot on their own stove.
