It is bought live and by the pound, it is boiled the same day, and it is eaten slowly, with beer, by people who are in no hurry. Live is $35 a pound and boiled is $40 — live is the cheaper one, which is backwards for seafood and deliberate: the second price includes our stock, our butter and a driver who has to arrive hot. Plenty of our customers have boiled crawfish their whole lives and only want the crawfish. Three pounds is the minimum when they are ordered on their own.
