Start with the honest part, because Oxnard is an hour and change from our pot. Crawfish boiled in Sun Valley and driven fifty-three miles up the coast arrive good, but they do not arrive the way they left, and pretending otherwise would be a bad way to meet you. This is precisely why the live tank exists. Raw crawfish leave here uncooked, five dollars a pound under the cooked price, and a long road takes nothing from them, because the cooking has not happened yet. You handle that part, on your own stove, at the hour you actually plan to eat.

Which suits this town. The 101 the entire way, north out of the Valley and then west along the ocean once the freeway turns. Fifty-three miles, in the region of sixty-nine minutes of driving with clear lanes, and clear lanes are the assumption carrying that sentence. Through Calabasas and over the Conejo grade the 101 stacks up in both directions at commute hours, and a Friday afternoon pointed toward Ventura County can absorb an extra half hour without anything remarkable happening. Past Camarillo it opens out and stays open. The final few miles into town are flat farm road and then boulevards.

Will boiled crawfish still be hot after an hour on the freeway?

Warm rather than steaming, and we would rather say that now than argue about it later. The sealed trays hold heat reasonably and the garlic butter does not suffer, but sixty-nine minutes is sixty-nine minutes. There are two fixes. Buy them live and take the last step yourself. Or order big: a set for six or the Crawfish Feast leaves the kitchen packed deep, and a full tray keeps its temperature far better than a single thin one.
