Ventura is the far end of everything we do, so the useful thing to hand you is arithmetic instead of a promise. Around sixty road miles from the Sun Valley kitchen, better than an hour and a quarter behind the wheel on a clear freeway, and the city is not one distance but several: the old downtown, the pier and the Pierpont lanes in 93001 measure out noticeably farther than midtown 93003 or the streets running east toward Saticoy in 93004. People order it anyway. A birthday on the beach side of the freeway, a long table at a house on the Keys, an apartment above Main Street with a kitchen nobody would try to boil three pounds of crab in.
At this range we would rather sell you the right thing than the obvious thing, and we will say plainly what that is: live crawfish, or a large order, ideally both. Live means raw out of the tank, five dollars a pound under the cooked price, and the drive costs them nothing at all because the boiling is still ahead of them — the pot goes on when you decide to eat. Large means a set for six or the Feast, which travels packed and holds its heat, and spreads the cost of getting here across a whole table rather than resting it on two pounds. Anything going past thirty miles also needs $150 on the order, and almost every Ventura order clears that without trying.

The 101 the whole way, and nothing else. It is our longest single run: over an hour and a quarter with the lanes clear, considerably more when they are not. The Conejo grade is where it goes wrong, in both directions and at both commutes, and a summer Friday pointed up the coast can bury half an hour there before the ocean is even in sight. After Camarillo the road empties and the last stretch moves. Coming into town the freeway runs between the beach and everything else, so which offramp we take — California Street, Seaward, Victoria — decides the final five minutes more reliably than the traffic does.

Ventura is an old town and wears it: a mission at the top of Main Street, blocks of second-hand shops and record stores below it, a pier at the bottom of the hill. Down in Pierpont the houses sit close together on narrow lanes with sand in the gutters and no parking left by afternoon. The Keys are canals and docks, where half the addresses are easier to describe by which water they face than by which street they are on. Out east past the fairgrounds the city turns into ordinary driveways and garages. It applies: $150 on the cart for anything travelling more than thirty miles, and this is roughly twice that. The fee is calculated per address rather than per city, which matters more in Ventura than anywhere else we serve, because 93001 measures out a good deal farther than 93003 and 93004 and the two ends of town genuinely land in different bands. Type the street address into checkout and read the number it gives you. Past $600 there is no fee at all, which is why the six- and eight-person orders make the most sense from here.
Live or boiled, for a drive of this length?
Live, if anybody in the house is willing to cook. They leave here raw and alive, cost five dollars a pound less, and the hour and a quarter takes nothing from them because the cooking has not started — you set the salt, the dill, the timing and the moment they hit the table. Boiled is still the right call when nobody wants to stand over a pot, in which case order enough that it leaves the kitchen packed deep and arrives warm, rather than one thin tray that has been cooling since Camarillo.
