Long Beach lives with its back to the water and it shows on the table. The port cranes are the skyline here, half the neighborhoods are named after something wet, Naples and its canals, Belmont Shore, the marina channels, and a tray of shells needs no explaining to anybody in this city. Out of the kitchen it is the 5 for a few miles, then the 710 the rest of the way, one long straight drop toward the harbor. Forty miles, near enough fifty-two minutes when the road behaves. It often does not. The 710 is the freight route out of the port, and from early afternoon it carries container trucks the whole stretch from the terminals up through Commerce, which is the delay nobody can talk their way around. Once we are off it the city is easy, because the boulevards are wide and they move. The hard part is the last hundred feet on the peninsula, where the lanes tighten and the curb was spoken for hours ago.

Every tray is sealed at the pot and rides out in an insulated carrier, so the drive costs the boil as little heat as it can.

Bixby Knolls up in 90807 goes back to porches, driveways and a yard big enough for the whole thing to happen outdoors.
